1 lb 5oz potatoes, peeled and roughly cut into small pieces 2 tbsp vegetable oil 1 small red onion, finely chopped 1 clove garlic, crushed 3.5 oz FAGE Total Yogurt 14 oz can of chickpeas, drained Bunch of fresh coriander, roughly chopped Salt and fresh ground black pepper
Preparation
Place potatoes in a pan, cover with boiling water, add a pinch of salt and cook until just soft.
Place half the oil in a frying pan, add onion and garlic and fry until translucent.
Drain the potatoes, add the onion and mash roughly till almost smooth.
Add the remaining ingredients and mix well.
Form into small patties, using clean hands to shape them.
Return to the frying pan, add remaining oil and cook gently till crisp and golden on outside and warmed through. Turn half-way through cooking so both sides are brown.
Today in the very early morning ( for me at least) I attended my first Creative Mornings by SwissMiss. The speaker was Khoi Vinh the Creative Director for New York Times .One thing that I really enjoyed him talking about was how he so candid about how he has failed in design. Basically he says it is good to fail then learn how to pick yourself back up. Each time you get better and better. It's nice to hear someone with such stature admit to such things. Points in the presentation: 1. Tell The Truth 2. Understand the problem 3. Don’t Skimp 4. Fads are bad 5. Let things be what they are 6. A little bit of self-delusion goes a long way
